good french toast... the homemade kind

i recently interviewed a professional chef and he explained the mechanics of making a superb french toast. this is what he said:

ingredients for 2 servings (2 slices each):

3 eggs

1/2 cup of milk

1 tsp sugar

dash of salt

15 ritz crackers

1/2 a stick of butter

4 slices of bread (your choice)

1. blend the eggs, milk, sugar, salt and cinnamon together in a bowl. 
2. on a separate plate, crumble/crush the ritz crackers. set aside. 
3. take a slice of bread and dip into egg mixture until well coated. 
4. then, transfer to plate of ritz and coat it on both sides. place in hot pan with melted butter. 
5. fry each side for at least 1 minute. 
6. repeat for each slice of bread. 
7. enjoy with your choice of garnish.

you read it right. delectable 3 ingredient no bake cheesecake. here in rexburg, my older sister that is now a mommy, taught me how to make a delicious no bake cheesecake. it is quick and easy and delicious. 

ingredients for this delicious piece of no bake art:

one 8 ounce package of cream cheese. any brand. but, use neufschatel cheese instead for less fat. it tastes the same and works just as well.

one can of sweetened condensed milk. preferably the cheap brand.

1/3 cup full of lime juice. it doesn't have to be fresh.

one ready made graham cracker crust. you can make your own, but that would change the cheesecake from being "easy and quick" to "not easy and quick." 

directions to put this all together:

1. empty the cream cheese into a bowl and warm it up in the microwave for 30 seconds.
2. take an electric mixer and blend the cream cheese until it is smooth. 
3. pour the sweetened condensed milk into the smooth cream cheese. 
4. empty the citrus juice into the cream cheese mixture.
5. blend together well.
6. pour mixture into pie crust and let sit in the refrigerator for at least 3 hours.
7. enjoy!

rexburg and a baby

recently, my older sister gave birth to a beautiful baby.
he is the cutest!

born on june 21, 2010; 6 lb 8oz.

i cannot wait to see him on our trip to rexburg, idaho!
