good french toast... the homemade kind

i recently interviewed a professional chef and he explained the mechanics of making a superb french toast. this is what he said:

ingredients for 2 servings (2 slices each):

3 eggs

1/2 cup of milk

1 tsp sugar

dash of salt

dash of cinnamon

15 ritz crackers

1/2 a stick of butter

4 slices of bread (your choice)

1. blend the eggs, milk, sugar, salt and cinnamon together in a bowl. 
2. on a separate plate, crumble/crush the ritz crackers. set aside. 
3. take a slice of bread and dip into egg mixture until well coated. 
4. then, transfer to plate of ritz and coat it on both sides. place in hot pan with melted butter. 
5. fry each side for at least 1 minute. 
6. repeat for each slice of bread. 
7. enjoy with your choice of garnish.
